Ingredients:
For the granola cups:
- ½ medium banana, mashed
- 2 tbsp honey
- ½ tsp cinnamon
- 90g whole rolled oats
- 1 tsp veg oil (to lightly grease cupcake tin)
For the filling:
- 3 tbsp 0% fat Greek yogurt
- 2 tsp Nesquik Banana Milkshake Powder
- Chopped fruit (blueberries, raspberries, strawberries)
You will also need:
- a cupcake tin
Method:
- Pre-heat the oven to 180°C (160°C fan).
- Add the banana to a mixing bowl and mash with a fork. Add in the honey and cinnamon and mix again until completely combined. Add in the oats and mix until all the oats are coated in the honey – banana mix.
- Lightly grease the cupcake mould then decant the mixture evenly between the six holes. Use your fingers to mould the mix into the shape of the tin, making sure to try and keep the bottom and edges of the same thickness.
- Bake in the oven for about 10 minutes until the edges are starting to turn golden. Remove from the oven and allow to cool.
- Whilst the cups are cooling, mix together the Nesquik and yogurt for the filling. Gently remove the cool granola cups from the tin and fill with the flavoured yogurt.
- Top with your chopped fruit and enjoy!
